Abstract

This project was carried out in order to use the residual milk whey from the processes of the lactic industries of the sector, located in the province of Manabí, canton Santa Ana, as raw material for obtaining lactic acid, for which purpose, it was carried Carry out the calculation of the annual potential demand in Manabí ($ 23,360) representing this value 16% of the national demand, covering 10% of the lactic acid market. Subsequently, a bibliographical investigation was carried out to evaluate the production of lactic acid, a yield of 8.3% of lactic acid was determined from the fermentation of the whey using the bacterium lactobacillus bulgaricus as a microorganism. Then the elaboration of the sizing of the equipment that the plant will use for the production of lactic acid was carried out, avoiding the oversizing of the equipment that increases the cost of production. Each one of the equipment has its technical data sheet which shows its capacity, dimensions and energy required for its operation. Finally, an economic proposal was made which includes the price of the equipment necessary for the implementation of the plant, it also consists of the annual expenditure made by the inputs used in the industry, thus giving us an idea of the investment required for start-up of a plant at this scale.
